Easy Vegan Pumpkin Chocolate Chip Oatmeal Cookies [+VIDEO]

Ingredients You’ll Need to Make Vegan Pumpkin Chocolate Chip Oatmeal Cookies: 

  • Softened vegan butter
  • Organic brown sugar
  • All purpose flour
  • Old-fashioned rolled oats
  • Pumpkin spice seasoning
  • Pumpkin puree
  • Vanilla extract
  • Sea Salt
  • Baking soda
  • Vegan chocolate chips

How to Make Vegan Pumpkin Chocolate Chip Oatmeal Cookies

One of the reasons why I love this recipe is because it is so simple to make! Once you’ve gathered all of your ingredients you’ll want to start by pre-heating your oven to 350 degrees. For this recipe, it’s necessary to soften your vegan butter before starting. The best way to do this is to simply leave it out on your countertop for an hour or so prior to starting this recipe. 

Once your vegan butter is softened, add it to a mixing bowl along with the brown sugar and use a hand mixer to cream the two together until it appears whipped. Next, you’re ready to add the remaining ingredients to the mixing bowl (everything except the chocolate chips- we’re going to add those in at the very end).

Adding in your flour, oats, pumpkin spice seasoning, pumpkin puree, vanilla extract, salt, and baking soda. Mix these ingredients together with your hand mixer until everything has been well combined. At this time you’re ready to add in your chocolate chips. Stir these into the mixture until they have been well Incorporated. 

Grab a baking sheet and line it with parchment paper. I like to do this to keep my cookies from sticking to the pan. Alternatively, you can use a baking mat if you have one. Use a cookie scoop in order to spoon out individual portions of the dough  and  evenly spaced them on to the baking sheet. Once they have all been arranged use your fingers or the bottom of a cup to gently press each of the cookie dough balls down so that they baked into flat cookies, as opposed to large round ones.

Transfer them to the oven and allow them to bake for about 10 minutes. Once the cookies are finished remove them from the oven and allow them to cool for a few minutes before removing them from the baking sheet. Once they have cooled you can transfer them to a serving dish  and prepare to  bake the remaining cookie dough if you weren’t able to fit all of them on the sheet at once (like me!).

How to Store Vegan Pumpkin Chocolate Chip Oatmeal Cookies

These Vegan Pumpkin Chocolate Chip Oatmeal Cookies are perfect for baking ahead! If you know you have an event or gathering that you want to bring these to you can totally make them the night (or maybe even a  day or two) before and they’ll still taste great!

Simply bake and store them in an airtight container in the fridge until you’re ready to  share them. They should keep this way in the fridge for up to 1 week.

 Can I Freeze the Dough?

You  can absolutely freeze the dough for these Vegan Pumpkin Chocolate Chip Oatmeal Cookies! Simply follow the instructions on the recipe card and once the dough has been made transfer it to an airtight container then freeze until you’re ready to bake them.

Once you’re ready to bake these Vegan Pumpkin Chocolate Chip Oatmeal Cookies, remove them from the freezer the night before and transfer them to the refrigerator in order to let the dough thaw. Once the dough is thawed bake them as instructed.

  • Preheat oven to 350°
  • In a large bowl, cream together the sugar and the vegan butter
  • Add in all other ingredients (except the chocolate chips) and mix to combine.
  • Once combined, gently mix in the chocolate chips.
  • Line a baking sheet with parchment paper and use a cookie scoop to evenly distribute the cookies, spacing them appropriately.
  • Gently flatten them a bit so that they are the shape and thickness you want them to be when they're done.
  • Transfer the cookies to the oven and bake for 10-12 minutes.
  • Once done baking, let cool for 5-10 minutes and enjoy! Store leftovers in airtight container.
