Easy Vegan Triple Berry Crumb Bars [+VIDEO]

I am so excited to share these new Vegan Triple Berry Crumb Bars with you all! If you’ve never had one before, or something similar, it’s basically a pie in bar form. Doesn’t that sound heavenly? A travel friendly piece of pie!

  • cornstarch

  • 1 flax egg
  • 1 tsp vanilla

How to make these Vegan Triple Berry Crumb Bars:

Making these Vegan Triple Berry Crumb Bars is super easy. I love that you really only need a few basic ingredients with the addition of fresh berries to make this simple recipe. To start, you’ll need to gather up all of your ingredients. There’s nothing worse than starting on the recipe only to find that you are missing things halfway through.

There are two components of this recipe – the crumb topping/crust and a very very filling. Let’s start with the crumb topping/crust first. I find it easiest to make the pie crust in a food processor or high speed blender. Simply add all of the ingredients to your machine and then pulse until that mixture is crumbly.

Add in the water slowly and used as much as you need. while the mixture is mixing be sure to scrape the sides down as necessary so that makes churches no get stuck at the bottom of the container. The end result should be crumbly.

Alternatively, if you don’t have a blender play food processor you can make this crest by hand simply add all of your ingredients to a large bowl and use the back of a fork to press the butter into the dry ingredients. Again adding Cold water in slowly.

Now that the crumb topping has been made, divide that mixture in half as best you can and spread 1/2 of the mixture over the bottom of an 8 x 8 baking dish. Before adding the mixture be sure to line your bank either a nonstick cooking oil or parchment paper. It would be a shame for these Vegan Triple Berry Crumb Bars to stuck in the pan!

Use your fingers or the back of a spoon to press it firmly into the baking dish what, be sure to cover the bottom well. Set this aside while we begin to prepare the berry filling.

Lucky for us, preparing the berry filling is really simple. Grab all of my berries – raspberry strawberry and reflecting how long did the meeting. Adding two readings use a spoon to stir everything together, insurance all of the berries have been evenly coated.

Once finished baking, allow the bars to cool until they breached a room temperature. If you’re in a rush you can always let them cool for a bit on the countertop and transfers it to the fridge or freezer, checking on them periodically to help speed the process along.

Yes and no. These Vegan Triple Berry Crumb Bars are the absolute best made fresh. Mainly because they don’t reheat very well, but still worth eating anything that’s leftover!

If you’re interested in saving Time while I’m making this recipe and need to make some components ahead of time you could make the crust the day before and it said it in the fridge overnight.

Then make the berry filling the day of so that all you have to do on the day that you needed is to press the crumb topping/crust into the baking dish layer it with the berry filling then spread the crumb topping over it and bake.

Can I Use Different Berries?

Absolutely! If you’d prefer to use a different berry mix that is absolutely fine. Blueberries would go great with this recipe in addition to others. You could also decide to use one single berry instead of a combination. The choice is yours!

Easy Vegan Triple Berry Crumb Bars [+VIDEO]

A pie in bar form, these triple berry crumb bars feature strawberries, blackberries and raspberries. A simple crust at the bottom, a berry-filled filling in the middle and a lightly crispy crumble on top! The perfect summer dessert!

Instructions

  • Preheat oven to 375°
  • In a high-speed blender or food processor add all of the ingredients for the crust, excluding the water.
    1½ cups All- Purpose Flour, ½ cup Organic Cane Sugar, ½ tsp baking powder, 1 tsp cinnamon, 1 pinch Sea salt, ½ cup vegan butter, 1 tbsp cold water
  • Pulse until the mixture is crumbly, adding the water in slowly. Scrape down the sides as necessary.
  • Press half of the mixture into the bottom of an 8×8 baking dish (lined with parchment paper or well oiled to avoid sticking) to form the crust. Set aside.
  • Add all berry filling ingredients together in a large bowl and stir to combine.
    1 cup raspberries, ½ cup blackberries, ½ cup strawberries, 1½ tbsp cornstarch, 2 tbsp lemon juice, ¼ cup organic cane sugar, 1 flax egg, 1 pinch sea salt, 1 tsp vanilla extract, 1 pinch cinnamon
  • Add berry filling over top of the crust, then sprinkle the remaining crust over top of the filling.
  • Transfer the dish to the oven and bake for 40 minutes.
  • Once finished baking, allow the bars to reach room temperature before serving.
  • Garnish with powdered sugar and cut into squares. Enjoy!

  1. I made these bars today and delicious is an understatement!! I subbed maple syrup for the cane sugar in the filling and my goodness they were still delectable.

    1. Hey Madonna! I would try thawing, gently patting them dry and tossing lightly in flour (just to lightly coat the outside). Then proceed with the rest of the recipe as normal. I hope you’ll come back and let us know how it goes!😊

    one word: YEEESSS! go make this!! it’s quick, easy, and customizable! i forgot the flax egg in the fridge (oops LOL) and it still came out perfect. i subbed spelt flour and didn’t use baking soda/powder. strawberry, raspberry, blueberries. next im trying apple! peach! all the fruits! lol
