Vegan French Toast Sticks with JUST Egg [+ VIDEO]

Did you eat french toast sticks growing up? I sure did! A crispy coating on the outside met with a light, fluffy, airy inside and dipped into a generous portion of syrup always made for the best breakfast treats. I haven’t bought French toast sticks in eons, however I have been wanting to try this recipe for quite some time. So glad that I finally made it happen because these Vegan French Toast Sticks with JUST Egg are amazing!

 If you are ever concerned about making french toast without egg, worry no more! This recipe is completely vegan, egg and dairy free!  For this recipe we’re actually going to be using one of my favorite vegan products. JUST Egg is an amazing egg substitute. It’s great to eat on its own however, it also works really well in recipes. I get a lot of questions about different ways to use JUST Egg and this recipe is one of my favorite ways to do so!

How to Make Vegan French Toast Sticks with JUST Egg:

For this recipe you’ll want to start by gathering all of your ingredients. There’s nothing worse than starting a recipe only to realize that halfway through you don’t have everything that you need.

Once all of your ingredients are gathered you can go ahead and start putting together the wet mixture that you’re going to use to dip your bread into.

Vegan French Toast Sticks with JUST Egg

To make the mixture, combine your cornstarch, vanilla extract, ground cinnamon, JUST Egg, plant milk of choice, and a pinch of salt into a dish that’s appropriate for dipping. Stir the ingredients together and set aside.

The next thing you’ll want to do is pre-heat a large pan on the stove to a medium temperature. Add a tablespoon of vegan butter to the pan so that it coats the bottom.

Cut the bread that you intend to use into “sticks.” For this particular recipe I thought the vegan brioche bread that I picked up from Trader Joe’s would be the perfect option, but if you can’t find vegan brioche in your area feel free to use any vegan friendly bread that you would prefer. Slice your bread into the size of your choice (I like mine 1½ – 2 inches wide) and set them aside.

Carefully dip one side of the bread into the wet mixture allowing it to sit for a few seconds before flipping it over to soak the opposite side. Once the bread has been thoroughly soaked, transfer it to your preheated pan and cook on each side until lightly browned. Repeat this process until all of your sliced bread has been cooked.

Once all of your vegan french toast sticks have been prepared you can dust them with a little powdered sugar and top them with fresh berries of your choice. Don’t forget the maple syrup (try warming it up)!

What Kind of Bread is Best for Vegan French Toast Sticks?

It really just depends on your preference! In the photos for this recipe I used a vegan brioche bread I found at Trader Joe’s, but you can also use regular sandwich bread, sourdough or whatever you have on hand.

If you can’t find a thick vegan brioche, try buying a loaf that’s not sliced from your local baker or grocery store. This way you can cut it into thick pieces of your choice.

Do These Vegan French Toast Sticks Freeze Well? 

I’m so glad you asked! Yes, these Vegan French Toast Sticks with JUST Egg freeze really well. What’s great is that you can actually reheat them easily after being frozen. After they have been cooked and cooled, simply store them in a freezer safe container and pop them into the freezer.

Once you’re ready to enjoy them again, remove them from the freezer and place them into your air fryer. Cook them at 400° for 4 minutes and voila!  they’ll taste as if they were just made!

How Can I Reheat These?

Did you have some leftovers after making this recipe? That’s great because these reheat really well! To reheat these vegan french toast sticks all you have to do is pop them into your air fryer at 400° for 2 minutes and they will taste as if you just made them!

 How Do I Store These Vegan French Toast Sticks?

If you have leftovers after making this recipe you can store them in an airtight container in the refrigerator or freezer. If you plan to eat them within two to three days you can certainly place them in the refrigerator once they’ve cooled completely.  The next day simply reheat and eat!

Instructions

  • In a large dish appropriate for dipping, combine the ingredients for the dipping mixture. Stir ingredients together until well combine.
    4 tbsp cornstarch, ½ tsp ground cinnamon, ½ cup JUST Egg, ¾ cup plant milk of choice, 1 pinch of salt, 1½ tsp vanilla extract
  • Heat a large pan or griddle to medium heat and add vegan butter to coat the bottom.

  • Slice your vegan bread into "sticks" according to preference (I prefer about 1½ – 2 inches wide).
    7 pieces of bread
  • Dip each of the sliced pieces of bread into the wet mixture, coating both sides thoroughly. Flip if necessary.
  • One at a time, add the soaked bread slices to the hot pan and cook on both sides until golden brown. Repeat until all pieces have been cooked.
  • Dust with powdered sugar and top with your favorite berries and maple syrup. Enjoy!
