Easy Pineapple Salsa

I’ve been dying to make my own version of pineapple salsa for what feels like forever! Having a housewarming party (finally) gave me an excuse to do just that! I love how conflicting pineapple salsa is. Super sweet from the pineapples mixed with a little spiciness from the jalapeños. It’s like a match made in heaven. Especially when paired with a perfectly salted tortilla chip. My mouth is watering just thinking about it!

Easy Pineapple Salsa

For this pineapple salsa recipe, I used a combination of fresh and canned pineapples (because of this, you can kinda see the two different shades of yellow in the pics). Why? No particular reason outside of wanting to keep my other pineapple on hand to devour by itself. As you can see below, this recipe calls for a little over 2 cups of diced pineapples. After cutting the first pineapple, I realized this wouldn’t be enough, so that’s when I decided to mix the canned with the fresh. Of course fresh is always best, but with the addition of the flavors from the jalapeños, cilantro, red pepper, lime juice, and red onion you probably won’t even notice the difference.

Easy Pineapple Salsa

To make this easy pineapple salsa, you only need a few ingredients. Some of which you may already have on hand. I don’t know about you, but I typically have a lot of these items on hand for various recipes. Especially onions and jalapeños. I typically keep canned pineapple in the pantry for snacking or making smoothies for the week. For serving, you can get cute like I did and opt for using a halved pineapple, or you can keep it simple and serve in a bowl. Because I was hosting a gathering, getting cute was my only option!

I think this salsa also has the potential to be pretty versatile as well. I’m currently imagining this salsa atop some tasty vegan fish tacos. Just the thought of it has me excited! Easy Pineapple Salsa

Ingredients

  • 2 ½ cups small diced pineapples fresh or canned- I used a combination of both
  • 2 jalapeños diced and seeded depending on heat preference
  • 1 red pepper diced
  • 1/2 cup diced red onion
  • 1/3 cup packed cilantro roughly chopped
  • juice of ½ lime
  • 1 tsp salt

Instructions

  • Combine all ingredients in a medium sized bowl.
  • Serve with your favorite tortilla chips and enjoy!
