If you’re looking for an easy vegan vanilla cake, I’ve got exactly what you’ve been looking for. This vanilla cake recipe is not only delicious, but super versatile, as it could be used for a variety of different things. I haven’t tested it yet, but I’d imagine this cake could be easily adapted to make cupcakes or even those cute minimalist cakes. You know, the ones with minimal icing around the outside to make for a cute rustic cake and topped with edible flowers and/or fresh fruit. So far, I’ve only tried it as a regular round cake, but I can’t wait to experiment with this recipe. I’ll be sure to keep you posted! Y’all know how much I love sweets!
Baking this Easy Vegan Vanilla Cake:
Making this cake is super easy. It requires just 7 simple ingredients. Yep, just seven! You probably have most if not all of them on hand already! First you start by combining the dry ingredients, then mixing in the wet ingredients. Want to know the best part? You don’t even need an electric mixer! I made this cake twice, both times just using a whisk!
As for baking the cake, I tested this out using two different methods. The first time, I simply sprayed the baking pan with oil. The cake was finished in about 30 minutes and was lightly crispy on the outside. The problem was, when I flipped it out of the pan, half of it was still stuck in there. Not super stuck, just needed to be run under with a spatula.
For my second try, I decided to use parchment paper. This made a huge difference! The cake was soft all over, including the sides and bottom. Most importantly, I was able to effortlessly remove it from the pan. The only thing I would do differently is how I lined the pan. As you may have noticed from the photos, the sides are not completely smooth. This is because of the way I laid the parchment paper in the pan. I figured this would happen, but I was too lazy to cut the parchment paper. A circle for the bottom and a long rectangular strip to line the sides.
The bottom line:
Y’all, I’m so obsessed with this easy vegan vanilla cake. It’s soft, spongy, buttery and best of all, delicious. I have literally eaten this cake by itself, straight out of the pan. No icing, no nothing. Just straight cake! Trust me, it’s LIKE THAT! Go ahead and give this cake a try and let me know what you think! If you decide to make these into cupcakes, be sure to keep an eye on them while in the oven, as these will likely take less time to bake. Let me know what you think in the comments below!

This recipe is great! I made the cake last night and it tastes so good. I shared some slices with friends and they said that it tasted as good as a non-vegan cake.
Thanks Bri! I shared mine with friends/fam too and got the same feedback 🙌🏾
It doesn’t get any easier than this! I had all the ingredients except the cane sugar (substituted with brown sugar) and it still came out great. I put some of the batter into a mini donut pan just to try it out. Baked for 15 min and had mini donuts. Soft, spongy and delish!
So glad you enjoyed it! Good to know that brown sugar works too! 🙂
I’m actually vegetarian, but was searching for a vegan cake recipe for my friend’s birthday. This is so simple and easy, and my friends and family loved it. They want to bake more of it for the next birthday lol. Thank you so much ❤️
Sakshi, thanks so much for giving this recipe a try! I’m so glad you and the fam enjoyed it!!
This was a great success!!! And it’s so easy and customisable – I’ve simply served it with powdered sugar and cocoa powder on top and was absolutely delicious! I also added a little bit of grated lemon peel to the dough and it gave it a nice accent 🙂 thank you for this.
Tiziana, thanks so much for trying out this recipe! The lemon sounds like a great addition! 😋
Super good! I made this today for my birthday, it was so easy, I already had all the ingredients at home! So good, I ate it with some Vegan whip cream! Even my husband, who’s not a big cake eater, loved it!
Thanks for this yummy recipe!
Thanks so much Sophie! So glad you enjoyed it! 🙂

Hi, I’m a lacto vegetarian so don’t eat eggs but can have dairy products. Could I substitute all the vegan products with dairy products?
Hi Tara, because I don’t consume animal products, I can’t say for sure whether it would work or not, but might be worth a try. If you do try it, please come back and let us know how it goes!
I made this delicious cake yesterday. I love it!! It’s really quite moist, sweet, and perfect as a one layer cake. I did frost it with the vegan vanilla frosting, which added a wonderful buttery flavor. I topped the cake with blueberries for an extra bit of yumminess. I do think I will add more fruit topping next time.
