If you’re looking for an easy vegan vanilla cake, I’ve got exactly what you’ve been looking for. This vanilla cake recipe is not only delicious, but super versatile, as it could be used for a variety of different things. I haven’t tested it yet, but I’d imagine this cake could be easily adapted to make cupcakes or even those cute minimalist cakes. You know, the ones with minimal icing around the outside to make for a cute rustic cake and topped with edible flowers and/or fresh fruit. So far, I’ve only tried it as a regular round cake, but I can’t wait to experiment with this recipe. I’ll be sure to keep you posted! Y’all know how much I love sweets!

Making this cake is super easy. It requires just 7 simple ingredients. Yep, just seven! You probably have most if not all of them on hand already! First you start by combining the dry ingredients, then mixing in the wet ingredients. Want to know the best part? You don’t even need an electric mixer! I made this cake twice, both times just using a whisk!

As for baking the cake, I tested this out using two different methods. The first time, I simply sprayed the baking pan with oil. The cake was finished in about 30 minutes and was lightly crispy on the outside. The problem was, when I flipped it out of the pan, half of it was still stuck in there. Not super stuck, just needed to be run under with a spatula.

For my second try, I decided to use parchment paper. This made a huge difference! The cake was soft all over, including the sides and bottom. Most importantly, I was able to effortlessly remove it from the pan. The only thing I would do differently is how I lined the pan. As you may have noticed from the photos, the sides are not completely smooth. This is because of the way I laid the parchment paper in the pan. I figured this would happen, but I was too lazy to cut the parchment paper. A circle for the bottom and a long rectangular strip to line the sides.

  • Preheat oven to 350°
  • In a large bowl combine all of the dry ingredients, then add in the wet ingredients and mix together.
  • Transfer the batter to a round baking dish lined with parchment paper (for effortless removal).
  • Bake for about 30 minutes or until lightly browned and a toothpick comes out dry.
  • Once done, transfer to a cooling rack to cool. Enjoy as you wish!

    It doesn’t get any easier than this! I had all the ingredients except the cane sugar (substituted with brown sugar) and it still came out great. I put some of the batter into a mini donut pan just to try it out. Baked for 15 min and had mini donuts. Soft, spongy and delish!

    I made this delicious cake yesterday. I love it!! It’s really quite moist, sweet, and perfect as a one layer cake. I did frost it with the vegan vanilla frosting, which added a wonderful buttery flavor. I topped the cake with blueberries for an extra bit of yumminess. I do think I will add more fruit topping next time.
