Lately I’ve been really into grain and veggie bowls. I was inspired by a local restaurant where they served an amazing dish with jack fruit, guacamole, corn, and a few other veggies. All of the flavors combined seemed to work in harmony together. It was all SO good! My version is a little bit different though. In an effort to increase my veggie intake, I wanted to make a bowl that was mostly veggies, but needed a sauce to tie them all in. This is how I came up with what you see below! This sriracha peanut sauce was perfect!
This sauce comes together really quickly, in just 5 minutes! Just gather up all of your ingredients and whisk em’ together. It’s as simple as that! Not a fan of spicy food? Don’t worry, the sriracha is pretty mild.
If you’re not in the mood to prepare as many veggies as I did, this is perfect over broccoli and rice. Sometimes less is more, right? Go ahead, give this sriracha peanut sauce a try and let me know what you think in the comments below!
