Fruit Stuffed Sweet Potato

One of my new year’s “resolutions” was to make an effort to eat more whole foods. Believe it or not, even as a vegan it’s really easy to get wrapped up in all of the junk! Trust me, it’s REALLY easy! TOO easy! I’ve been seeing a lot of stuffed sweet potatoes online and was inspired to make my own. I know that a baked sweet potato may seem a little weird to eat for breakfast, but trust me on this one! They’re super tasty and filling when you stuff them with all of your favorite fruits!

My favorite part is that this stuffed sweet potato is so easy to customize and a great way to utilize fruit that’s going bad. You could even add your favorite nuts for a little crunch! Stuffed Sweet Potato

Fruit Stuffed Sweet Potato

Ingredients

  • 1 cooked sweet potato
  • Nutmeg to taste
  • Cinnamon to taste
  • Any of your favorite fruits (I used, strawberries, blueberries, banana and pomegranate seeds)

Instructions

  • Cook your sweet potato however you'd like. I cooked mine in the oven for about an hour and twenty minutes. You could cook yours in the microwave if you'd like, it's much faster!!
  • Slice and top your sweet potato with all of your favorite chopped fruits and enjoy!
    For added sweetness, add a little maple syrup!
