Creamy Cilantro Avocado Dressing

Over the past few months I’ve been experimenting with different ways to prepare salad. This hasn’t always been easy for me, as I grew up not really enjoying them. The only way I liked them was if they were loaded with everything under the sun! Chicken, fruits, dressing and a variety of veggies. Part of my salad journey has been working on changing my mindset and outlook on what a salad is. I used to think salad was just a pile of leafy green vegetables topped with some add-ins and a dressing over top. Boy was I wrong! After experimenting with this new Creamy Cilantro Avocado Dressing, my creative juices started flowing!

As you can see from the photos, my initial approach to utilizing this dressing, was pretty traditional. I had some kale that had been hanging out in the fridge for a bit too long. It was time for me to do something with it before it was too late. I immediately paired this Creamy Cilantro Avocado Dressing with some of your typical add-ins like tomato and red onions. Next, I threw in the chickpeas for a little something different, and topped it with the dressing. The salad was fine, but it wasn’t life-changing. Just typical.

The next day, I still had a container full of dressing that needed to be used, but this time, I was out of kale. I didn’t have any spinach on-hand either. What in the world was I going to do without my two go-to salad bases? Broccoli. I had almost an entire bag of broccoli that was calling my name. I paired it with the same add-ins I used in the salad the day before. BAM. I was in business. I rarely eat broccoli raw, as I usually prefer it cooked. Sauteed with some minced garlic and seasoned with salt and pepper. Perfection! In fact, I think the only time I eat raw broccoli, is when it’s on one of those store-bought party trays people buy when they’re having a get-together.

I enjoyed this broccoli salad so much, I’ve been eating it for the past 3 nights for dinner. The Creamy Cilantro Avocado Dressing really brought these veggies to life and made broccoli my new favorite veggie to eat raw. Creamy Cilantro Avocado Dressing

Ingredients

  • 1 avocado pitted and peeled
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp crushed red pepper optional
  • 2 tbsp lime juice
  • ½ cup cilantro packed
  • cup olive oil
  • 1/2 cup water
  • salt+pepper to taste

Instructions

  • Add all ingredients to a small blender and mix until combined.
  • Transfer to a squeeze bottle and use as desired. Enjoy!
