This is super random, but every time I think of this Beet Juice recipe, the theme song from Bug Juice starts playing in my head. Y’all remember that throwback reality show about the kids at summer camp?! I think it used to come on the Disney channel. Crazy how I still know that song by heart all these years later. Any who, I didn’t start typing to reminisce on Bug Juice, though I really did love that show. I would rather tell you about this amazing Beet Juice recipe!
What’s Beet Juice?
Beet juice is a juice typically comprised of other fruits or vegetables with the main ingredient being beets. Can I tell you a secret? I’ve never really been too fond of beets. It wasn’t something I grew up eating, or drinking for that matter. I feel like there’s a part in everyone’s vegan or plant-based journey where they rediscover different foods.
Well, over the past three years I’ve been doing just that. I’ve been curious about beets for quite some time and I randomly decided to give them a whirl after a recent trip to the grocery store. I was casually strolling in the produce section when I locked eyes with a row of beets and knew I had to take home a few to try. So glad I did!
This beet juice recipe is just the beginning! I’m looking forward to consuming it as a food. I keep hearing that roasted beets are good… how should I try them next?
What are the Benefits of Beet Juice?
Beet juice is great for a lot of reasons. Beets are a great source of fiber, which can improve digestive health. In addition, they’re said to be able to help control blood pressure because of their concentration of nitrates. Worried about your protein intake? Drink some beets! Beets are also considered to be a great source of plant-based protein. Not to mention they’re also high in Vitamin C. So when you make this beet juice recipe, you’re getting all of these benefits on top of the nutrients from the remaining ingredients such as the ginger, apples, lemon and carrots. Thirsty for some beet juice yet?!
How Can I Make This Beet Juice Recipe Without a Juicer?
Don’t have a juicer? You can STILL JUICE! You’ll want to start by cutting or peeling the skin off of the lemon. You may also find it helpful to cut your other ingredients (like the carrots and beets) into smaller pieces to make it easier to blend. Combine all of the ingredients below in a blender along with a bit of water (I would start with about 1/4-1/2 cup) and blend it together until mostly smooth. If your blender gets stuck, feel free to add more water, a little at a time until it’s moving again.
Once the ingredients have successfully blended together, grab a fine mesh strainer (like this one) and place it over a large mixing bowl, then pour the blended mixture over it. Strain until you’re left with nothing but pulp in the strainer. Use the back of a large spoon to help push the liquid from the juice mixture into the bowl. Then VOILA! You’ve got juice.

Easy Sweet Lemon Ginger Beet Juice Recipe
Ingredients
- 2 medium sized beets (depending on how wide the mouth of your juicer is, you may need to cut them in half or quarters)
- 2½ inches of fresh ginger (plus more to taste)
- 5 small apples I used honey crisp
- 1 lemon skin removed
- 3 medium fresh carrots
Instructions
- Add all ingredients to a juicer.
- Enjoy!

I haven’t tried your recipe yet but it sounds delicious. I have one question though. I love beets, what do you think if I cut out 1 or 2 apples and added 1 or 2 more beets? It just seems like your recipe may be trying to hide the flavour of the beets(?)

I’ve been juicing and have found beet juice is tasty. I add one stalk of celery to mine and yummy!
