I have been wanting to try my hand at making chickpea tacos for quite sometime! For whatever reason, I never got around to it until now. As a blogger, I keep a list on my phone of different things I’d like to make in the future. Sometimes they are meals I see online that look perfect for adding my own little twist to, or sometimes it’s something I’ve seen at a restaurant that I’d like to try replicating at home. This time, it was something I had seen online. All of the recipes I’d previously seen for chickpea tacos seemed to be fairly complicated. I knew there was a much simpler way to make these tasty tacos, so that’s exactly what I set out to do! Create a recipe that had minimal ingredients, tasty, and didn’t break the bank!
How to Make Vegan Chickpea Tacos
Making these chickpea tacos is super easy. To make the cooking process smooth, I would recommend adding all of the seasonings to a small (more like tiny) bowl so that you can add them all at once. You can make this recipe oil free by simply using vegetable broth to cook the chickpeas. Alternatively, you can use an oil of your choice. Once the pan is heated, add the drained chickpeas to the pan, then add the seasoning, lime juice and liquid smoke.
A lot of the ingredients listed below are seasonings, most of which you probably already have. I wanted to make sure that these tacos were well flavored and easy to replicate. What’s cool about this recipe is that the chickpeas make for a great base. You can totally customize these vegan chickpea tacos by adding all of your favorite toppings to make them your own!
As you can see, I decided to go with a few of my favorites: sautéd peppers and onions. I simply used whatever I had on hand to make this chickpea tacos recipe come alive! In addition, I added diced tomatoes and sliced jalapeños. Homemade guacamole would be great with these too!

The tortillas may look like typical corn tortillas, but they’re actually a mix between corn and wheat! It’s always so tough for me to decide on which one to purchase, so this combination makes that decision a lot easier. I snagged them from Trader Joe’s, so if you’ve got one near you definitely try them out!
As far as costs, this dish is pretty inexpensive (my favorite part). A can of chickpeas costs less than $1 and so does a fresh green pepper and tomato. A package of tortillas is about $1.50 and if you really wanna get fancy, buy an avocado for $2! I’m not sure why people think eating plant-based is expensive. This is just ONE of the many plant-based meals you can make for the LOW!

Chickpea Tacos
Ingredients
- 1 can chickpeas drained and rinsed
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp red pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt and pepper to taste
- 1/2 tsp liquid smoke
- 4 small tortillas
- juice of 1/2 lime
- a few splashes of vegetable broth (to avoid sticking)
- toppings of your choice I used cilantro, avocado, diced tomatoes, sautéed green peppers and carrots
Instructions
- Add rinsed and drained chickpeas to medium sized pan along with vegetable broth and all seasonings. Mix until all chickpeas are coated over medium-low heat.
- Next, add in lime juice and liquid smoke. Stir. Allow to cook for about 10-15 minutes. While the chickpeas are cooking, begin preparing the toppings of your choice.
- Once the chickpeas have finished cooking, begin putting together your tacos. Enjoy!
