How to Make Vegan Corn Salad with Feta Cheese:
To make this vegan corn salad you’ll want to start by preparing all of your fresh vegetables. this means slicing everything beforehand so that when you’re ready to combine all of the ingredients everything is already prepped and ready to be added to the bowl.
For this recipe I decided to use frozen fire roasted corn. Alternatively you can use freshly grilled corn or even canned fire roasted corn. The decision is completely up to you!
Once all of your fresh vegetables such as the red onion, grape tomatoes, and cilantro have been prepared you’re ready to start putting all the ingredients together. In a large bowl combine your fire roasted corn, red onion, grape tomatoes, vegan feta cheese, melted butter, cilantro and chili powder along with a pinch of salt.
Grab a zester and zest one lime directly into the bowl. Then cut the lime in half and squeeze the juice from half of the lime into the bowl as well.
Grab a spoon and mix all of the ingredients together until everything has been fully combined, then top with additional cilantro and vegan feta cheese for garnish.

There are lots of ways to customize this recipe. To make this side dish a little more hearty you could add seasoned black beans or diced avocado.

- ½ cup grape tomatoes diced into ¼ or ⅛ pieces
- 2 tbsp fresh cilantro packed; roughly chopped
