Quinoa for breakfast sounds kinda crazy, right? Yea, I thought so too. Since adopting a plant-based diet I’ve been way more open to rethinking the ways in which I eat foods. To be completely honest, 5 years ago quinoa wasn’t even part of my diet. It was all rice, rice, and more rice! Rice will always be my first love, but over the years, I’ve really enjoyed discovering quinoa. I’d been seeing images of quinoa breakfasts and finally decided to try it for myself with this super easy and tasty quinoa breakfast bowl.
I think one of the keys to enjoying this quinoa breakfast bowl is to really jazz it up. Nothing too fancy, but fruits and seeds really helped set this meal off for me. If you’ve ever made quinoa before, then you’ll be familiar with the process. I typically cook my quinoa with water or veggie broth, but since this is a breakfast meal, I decided to swap the water for flax seed milk.
Why flax seed milk? It’s all I had on hand. Any plant-based milk will do, but flax seed milk was perfection! I typically buy plain, unsweetened, almond milk which has a pretty neutral taste. During a recent trip to the grocery store I decided to try something different and see what the flax seed hype was about. I’m glad I did. While it’s sweeter than I normally like, it was perfect for this quinoa breakfast bowl.
In addition to fresh fruits, nuts, and seeds, I drizzled a little agave over the top. It was perfection, y’all! By the time I finished taking pictures of all this yumminess, the quinoa had cooled. This was actually fine for me. This means it can be enjoyed hot or cold! Perfect for winter or summer. I DEF plan to add this quinoa breakfast bowl to my summer breakfast rotation.

Quinoa Breakfast Bowl
- In a small sauce pan, add the quinoa, flax seed milk, vanilla extract, and salt.
- Bring to a boil. Once boiling, reduce to a simmer and stir consistently.
- Once all liquid has dissolved, transfer cooked quinoa to a bowl and top with cinnamon, agave, and your toppings of choice. Enjoy!
