  • Preheat oven to 350°
  • In a large bowl, cream together both sugars and the vegan butter until it appears whipped.
    ½ cup softened vegan butter, 1/4 cup organic brown sugar, 1/4 cup organic white sugar
  • Next, add in all other ingredients and combine until evenly mixed (careful not to over-mix)
    1 cup all-purpose flour, 1½ cups old fashioned rolled oats, 1/3 cup unsweetened applesauce, 1 tbsp molasses, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1 pinch of ground nutmeg, 1/4 tsp salt, 1/2 tsp baking soda, 1- 1¼ cups dried cranberries
  • Line a baking sheet with parchment paper and use a standard cookie scoop to evenly distribute the cookies, spacing them appropriately. Gently flatten them a bit so that they are the shape and thickness you want them to be when they're done.
  • Transfer the cookies to the oven and bake for 10-12 minutes.
  • Once done baking, let cool for 5-10 minutes and enjoy! Store leftovers in airtight container.
