Preheat oven to 375°
In a high-speed blender or food processor add all of the ingredients for the crust, excluding the water.
1½ cups All- Purpose Flour, ½ cup Organic Cane Sugar, ½ tsp baking powder, 1 tsp cinnamon, 1 pinch Sea salt, ½ cup vegan butter, 1 tbsp cold water
Pulse until the mixture is crumbly, adding the water in slowly. Scrape down the sides as necessary.
Press half of the mixture into the bottom of an 8x8 baking dish (lined with parchment paper or well oiled to avoid sticking) to form the crust. Set aside.
Add all berry filling ingredients together in a large bowl and stir to combine.
1 cup raspberries , ½ cup blackberries, ½ cup strawberries, 1½ tbsp cornstarch, 2 tbsp lemon juice, ¼ cup organic cane sugar, 1 flax egg, 1 pinch sea salt, 1 tsp vanilla extract, 1 pinch cinnamon
Add berry filling over top of the crust, then sprinkle the remaining crust over top of the filling.
Transfer the dish to the oven and bake for 40 minutes.
Once finished baking, allow the bars to reach room temperature before serving.
Garnish with powdered sugar and cut into squares. Enjoy!
