Homemade Re-fried Beans!

Ingredients

olive oil

Medium onion
chopped

Red bell pepper
seeded and diced

Cloves garlic
minced

Cans of red beans
rinsed and drained
1/4
cup
Pickled jalepenos
chopped

Ground cumin
1
tsp
Salt
1/2
tsp
Ground black pepper
1/4-1/2
cup
Vegetable broth
1/4
cup
Chopped fresh cilantro
Instructions
Chop your veggies!
Saute veggies in large pan until cooked
Add in the drained red beans and mix well (Note- I added some leftover corn from a previous dish for more color and flavor)
Using a potato smasher or bottom of a cup, begin smashing the beans until beans are no longer whole.
Begin forming your tacos and enjoy!
