Homemade Re-fried Beans!

Ingredients

  • 3 tbsp olive oil
  • 1/2 Medium onion chopped
  • 1 Red bell pepper seeded and diced
  • 3 Cloves garlic minced
  • 3 15 oz Cans of red beans rinsed and drained
  • 1/4 cup Pickled jalepenos chopped
  • 1 tsp Ground cumin
  • 1 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1/4-1/2 cup Vegetable broth
  • 1/4 cup Chopped fresh cilantro

Instructions

  • Chop your veggies!
  • Saute veggies in large pan until cooked
  • Add in the drained red beans and mix well (Note- I added some leftover corn from a previous dish for more color and flavor) 
  • Using a potato smasher or bottom of a cup, begin smashing the beans until beans are no longer whole. 
  • Begin forming your tacos and enjoy!
