Cinnamon Rolls

Instructions

  • Warm up 1 cup of water until it is between 100-115 degrees F (it should feel like warm bath water). Sprinkle with 1 tsp of sugar and all of the yeast. Stir and let sit for a few minutes to activate. Mixture should have bubbles in it to show the yeast is alive. If there is no change, toss it and use fresher yeast
  • Mix the coconut oil, salt, 2 cups of flour, and remaining sugar together with the activated yeast mixture until it starts to come together and pulls away from the sides of the bowl and is one large piece of dough
  • Sprinkle a bit of flour on the counter and knead the dough a few times, then place it back in the bowl
  • Mix together brown sugar and cinnamon in a small bowl
  • Dust the counter with flour and roll out your dough in a rectangular shape, about 12 inches across. Spread the melted coconut oil over the rolled out dough, leaving a border of about 1 inch around the edges, free from oil
  • Evenly sprinkle the cinnamon and brown sugar mixture over the dough
  • Beginning with the longest side near you, begin gently rolling your dough into a log. Cut off each end and slice the remaining log into pieces about 1.5-2.5 inches thick. Note: I wanted 9 rolls so i cut mine about 2.5 inches each
  • Place each roll into a greased pan and let them rise for 20-30 minutes. Cover with a dish cloth
  • While the dough is rising, mix the ingredients for the icing
  • After 30 minutes, you will notice that the rolls have expanded. Place in a preheated oven at 350 degrees for 15-20 minutes
  • Once the rolls are done cooking, let them cool for 10 minutes or so, then ice them. Enjoy!
