A creamy and delicious stove top curried red beans with turmeric rice meal made with coconut milk and a few simple ingredients.

Ingredients

Curried Red Beans

  • 1 tsp thyme
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp Jamaican curry powder
  • 2 cans red beans (rinsed and drained)
  • 1 cup coconut milk
  • 1/2 cup vegetable broth
  • 1/2 white onion minced
  • 2 cloves minced garlic
  • 1 tbsp cornstarch + 1 tbsp water mixed (optional) used to thicken- add in a little at a time to reach desired consistency

Instructions

Curried Red Beans

  • Sautee garlic and onion in a large pan, then add in milk, broth, and red beans.
  • Stir in remaining seasonings and bring to a boil, then reduce to a simmer and stir consistently to avoid sticking.
  • Add in cornstarch and water mixture a little at a time to reach desired consistency (whole mixture will likely not be necessary). Remove from heat and enjoy!

Turmeric Rice

  • Add all ingredients to a pot, cover, and bring to a boil.
  • Once a boil has been reached, reduce to a simmer and stir. Add in additional water or broth in 1/2 cup increments as necessary if rice is not yet cooked.
  • Once done, remove from heat and serve!
