Chickpea Tacos

  • 1 can chickpeas drained and rinsed
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp red pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 1/2 tsp liquid smoke
  • 4 small tortillas
  • juice of 1/2 lime
  • a few splashes of vegetable broth (to avoid sticking)
  • toppings of your choice I used cilantro, avocado, diced tomatoes, sautéed green peppers and carrots


  • Add rinsed and drained chickpeas to medium sized pan along with vegetable broth and all seasonings. Mix until all chickpeas are coated over medium-low heat.
  • Next, add in lime juice and liquid smoke. Stir. Allow to cook for about 10-15 minutes. While the chickpeas are cooking, begin preparing the toppings of your choice. 
  • Once the chickpeas have finished cooking, begin putting together your tacos. Enjoy! 


Makes enough for 4 tacos. Need more? Recipe can easily be doubled!
