Ingredients

  • 9 Rhodes Yeast Dinner Rolls
  • 1 flax egg (1 tbsp ground flax seed meal + 2 tbsp water)
  • 1 can black beans drained, not rinsed
  • ½ cup diced red onion
  • ½ jalapeño diced (seeds are optional- keep as many or as few as you would like depending on preferred spice level)
  • ½ cup regular breadcrumbs
  • ½ tsp salt
  • 2 tsp black pepper
  • ½ tbsp onion powder
  • ½ tbsp garlic powder
  • ½ tsp cayenne pepper
  • 1 tsp chili pepper
  • burger toppings of your choice (optional)

Instructions

  • Preheat oven to 350°
  • Cook the thawed Rhodes Yeast Dinner Rolls according to the package instructions.
  • While the dinner rolls are baking, begin gathering the ingredients to make the black bean burgers.
  • Mix together the flax seed meal and water in a small dish to create the flax egg. Set aside in the freezer to thicken until needed.
  • In a medium-sized mixing bowl, add the drained black beans. Using a potato masher, mash them until most of the beans are smashed, leaving a few whole beans.
  • Add in all seasonings, breadcrumbs, red onion, jalapeño and flax egg. Stir with a large spoon to combine.
  • Preheat a lightly oiled pan on the stove to low medium-heat.
  • Using a ¼ measuring cup, scoop out ¼ cup of the black bean burger mixture and form a small patty using your hands. Set aside on a clean surface (like a cutting board or plate). Repeat until all of the mixture has been used.
  • Increase the pan's temperature to medium and add in your mini black bean burgers (3-4 at a time depending on how large your pan is). Cook for about 5 minutes on each side or until browned.
  • While the patties are cooking, you can begin preparing the toppings for your burgers.
  • Once all of the burgers are finished cooking, you can begin building your burgers with toppings as you'd like.
  • Serve and enjoy!
