Ingredients

  • 1 medium fresh pineapple cut into preferred shape
  • fresh mint for garnish (optional)

Brown Sugar Mixture

Instructions

  • Whisk together the ingredients for the brown sugar mixture in a small bowl.
    ¼ cup vegan butter, 4 tbsp brown sugar, ½ tsp cinnamon, 1 pinch nutmeg, 1 pinch sea salt
  • Transfer the cut pineapple pieces to a large container and spread the brown sugar mixture over the pineapple, making sure to coat each piece. Cover and set aside for at least 15-30 minutes.

  • Towards the end of the marinating time, preheat your grill to 350° -400° (be sure to clean the grates so that they are free of residue).
  • Once heated, evenly space the pieces of pineapple onto the grill and cover.
  • Cook on each side for 4-5 minutes (may vary depending on grill temperature).
  • Once all pineapple has finished cooking, remove them from the grill and transfer them to a serving dish. Garnish with additional cinnamon and fresh mint (optional) and enjoy!
