Avocado Basil Pesto Pasta

Ingredients

sun dried tomatoes

avocados
seeded and peeled

handful
fresh basil
About 12-15 whole leaves of various sizes

tbsp
Italian seasoning blend

tsp
minced garlic
1/2
tsp
salt
pepper to taste
a few shakes
1
tbsp
nutritional yeast
1/4
cup
olive oil
juice of 1/2 lemon
1
bag
pasta
of your choice
Fresh cherry tomatoes
or similar for garnish
Instructions
Begin cooking pasta according to directions on the package
In a food processor or blender (except for the fresh tomatoes), add all of the ingredients to a food processor and blend until smooth
Once your noodles are ready, toss them in the avocado mixture until well coated. Top with fresh basil and sliced tomatoes and ENJOY!
