In a medium-sized non-stick pot, add all of the ingredients to a pot (except the cilantro).
Bring to a boil and cover with a lid. Once boiling, reduce heat to a simmer (low setting) and stir.
Continue stirring frequently to avoid sticking.
Once you notice that most of the liquid is gone, remove the lid.
Once all of the liquid is gone, stir in your cilantro and garnish with an extra squeeze of lime (if desired). Serve and enjoy!
