Tofu Scramble

  • ½ block extra firm tofu drained if packaged in water
  • ½ green pepper diced
  • ½ red pepper diced
  • ¼ cup red onions diced
  • 2 tsp taco seasoning
  • ½ tbsp nutritional yeast
  • ½ tsp ground turmeric
  • salt + pepper to taste
  • 2-3 tsp olive oil


  • 4 Alpha Foods Meatless Sausage Patties
  • sliced avocado
  • sliced tomato
  • cilantro (to taste)
  • 4 slices of preferred vegan cheese
  • 4 English muffins


  • In a medium sized pan over low-medium heat add 2-3 tsp of olive oil. Add the half block of tofu to the pan and use the back of a fork to break up into crumbles.
  • Add the taco seasoning, nutritional yeast, and ground turmeric to the tofu. Stir to combine.
  • Once combined, add the peppers and onions. Increase to a medium-high heat and season with salt and pepper to taste. Stir frequently.
  • In a separate pan, begin cooking your Meatless Sausage Patties according to package instructions.
  • Toast English muffins.
  • Once the peppers and onions have been cooked through and the English muffins have been toasted. begin building your breakfast sandwiches: bottom half of English muffin, tofu scramble, vegan cheese (melt to help hold together), Meatless Sausage Patty, sliced tomato, sliced avocado, cilantro and top half of English muffin. Enjoy!
