Vegan Berry Trifle Cake

Layers

  • 2-3 cups berries of choice I used strawberries and blueberries
  • 1 container vegan whipped cream I used SoDelicious Coconut Whip

Instructions

  • Preheat oven to 350°. In a large bowl, combine all of the dry ingredients for the cake mix.
  • Add in the wet ingredients with the dry and combine well using a whisk.
  • Transfer the cake batter to a round baking dish lined with parchment paper for easy removal. Bake for 30 minutes or until toothpick comes out dry when inserted in the middle of cake.
  • While the cake is baking, begin slicing strawberries.
  • When cake is done baking, remove from the oven and transfer to a cooling rack. Let cool for at least 30-45 minutes or until room temperature.
  • Once cake is completely cooled, break up the cake into medium-large chunks. In a medium sized bowl begin layering the cake, berries, and whipped cream.
