A creamy and delicious stove top curried red beans with turmeric rice meal made with coconut milk and a few simple ingredients.

Curried Red Beans

  • Sauté garlic and onion in a large pan (with oil or water) until fragrant.
    1/2 white onion, 2 cloves minced garlic
  • Add in coconut milk, broth, and red beans. Stir to combine.
    1 cup coconut milk, 1/2 cup vegetable broth, 2 cans red beans
  • Stir in remaining seasonings and bring to a boil, then reduce to a simmer and stir consistently to avoid sticking.
    1 tsp thyme, 1 tsp black pepper, 1/2 tsp salt, 1 tbsp Jamaican curry powder
  • Add in cornstarch and water mixture a little at a time to reach desired consistency (whole mixture will likely not be necessary). Remove from heat and enjoy!
    1 tbsp cornstarch + 1 tbsp water mixed

Turmeric Rice

  • Add all ingredients to a pot, cover, and bring to a boil.
    1 tbsp olive oil, 1 cup rice, 1 tsp minced garlic, 1 tsp onion powder, 1 tsp turmeric, 1 cup vegetable broth, 1 cup water, salt+pepper to taste
  • Once a boil has been reached, reduce to a simmer and stir. Add in additional water or broth in 1/2 cup increments as necessary if rice is not yet cooked.
  • Once done, remove from heat and serve!
