Spinach Pesto

Ingredients
- 1/3 cup roasted pecans and cashews (350F for 5 min, then set aside to cool)
- 2 cups fresh spinach
- 1 oz fresh basil
- 1/2 cup olive oil
- 1/4 cup nutritional yeast
- 2 tsp salt
- 2 tsp minced garlic
- juice of 1/2 lemon
- cooked pasta of choice
Instructions
- Add all pesto ingredients to a food processor and blend until all ingredients are well combined
- Stir into cooked pasta until well coated and enjoy!
Notes
Makes about 1.5 cups
If you have leftovers, store the pasta and the pesto separately. If meal prepping, put the pasta in your dish and add a few spoonfuls of the pesto sauce overtop. DO NOT mix. If mixed, the sauce will seep into the noodles and make the pasta dry instead of creaming and flavorful :)
