In a medium sized pan over low-medium heat add 2-3 tsp of olive oil. Add the half block of tofu to the pan and use the back of a fork to break up into crumbles.
Add the taco seasoning, nutritional yeast, and ground turmeric to the tofu. Stir to combine.
Once combined, add the peppers and onions. Increase to a medium-high heat and season with salt and pepper to taste. Stir frequently.
In a separate pan, begin cooking your Meatless Sausage Patties according to package instructions.
Toast English muffins.
Once the peppers and onions have been cooked through and the English muffins have been toasted. begin building your breakfast sandwiches: bottom half of English muffin, tofu scramble, vegan cheese (melt to help hold together), Meatless Sausage Patty, sliced tomato, sliced avocado, cilantro and top half of English muffin.
