Confession: As a carnivore I never enjoyed eating bacon. I had tried it maybe 3 times in my life, but I could never figure out why the entire country seemed to go crazy at the very mention of it. So why would I decide to veganize a dish I never liked in the first place? Mostly because I knew the likelihood of it actually tasting like bacon was pretty slim, and I had a package of tempeh in the fridge that I had been holding on to for what felt like forever and I refused to turn it into a BBQ sandwich. I wanted to try something new! This recipe was so easy to make, I wondered why I had never tried it before! All you do is throw all of the ingredients together, cut, marinate and fry. It was that simple! I have to say, I’ll definitely be making this again. It was a great enhancement to my avocado toast and went really nicely in a grilled cheese (paired with tofurkey, Chao cheese, and spinach). Not to mention the marinade smells amazing!!
