For the past few weeks I’ve been eye balling these marshmallows from Trader Joe’s. Every week I would walk past them, telling myself that the odds of me roasting marshmallows on an open flame, making s’mores was highly unlikely. That is until I realized that I didn’t have to make s’mores! I could make one of my favorite childhood desserts: Rice Krispies! YUM! I honestly couldn’t remember the last time I had had one and was super excited to test them out. My mom used to make them occasionally growing up, another reason I was interested in making them.
I thought that snagging a recipe online would be simple. I was wrong. I had the darndest time trying to find a recipe that used ounces to provide direction as to how much marshmallows were needed. Why ounces? Most rice krispies recipes use the little tiny marshmallows, not the jumbo size (my only option at Trader Joe’s). After searching to no avail, I decided to just try and make up my own. I used bits and pieces of recipes that I had found and hoped for the best! It’s a winner, y’all!
Here’s what you’ll need:
– 1 bag of 10 oz Jumbo Marshmallows
– 6 cups of Rice Krispies Cereal ( I used Trader Joe’s brand)
– 1/4 tsp of salt
– 1/2 tsp vanilla extract
– 4 tbsp of vegan butter
