If you’re reading this, you likely heard about recent Hurricane Florence that hit parts of North Carolina, South Carolina, and Virginia. Initially it was supposed to hit the triangle area (where I live), but then at the last minute it turned further south. Preparing for a hurricane can be a little tricky. “How much water should I buy?” “What type of things should I be prepared for?” “How long might we be without power?” So many questions!
My main question was “what in the world am I going to eat?!” I needed food that didn’t necessarily need to be refrigerated, or could at least survive without having been refrigerated for a period of time. I also wanted to avoid buying out the whole grocery store in preparation, so I turned to the fridge first instead of running to the store. There were a few cans of chickpeas on hand in addition to an avocado and cilantro. It may not sound like a match made in heaven to you, but I had dreams of avocado hummus and this was my opportunity to bring it to life!
Making hummus is really simple. I love making hummus for that reason alone. Just dump everything into a food processor, blend until smooth and find something to dip it with! Or even better, use it as a spread for a wrap or sandwich. You’ve got options!
This avocado hummus is like a happy medium between hummus and guacamole. I kept it simple with the recipe below, but you could definitely try stirring in some diced tomatoes and red onion for more of a guacamole feel. You might be wondering, “why don’t I just make guacamole then?” Well folks, anytime you can sneak in some added protein and fiber, you’ve won at life. - 1/2 cup cilantro
- 1 whole avocado peeled and seeded
- 1 15 oz. can chickpeas drained and rinsed
- 1/2 tsp minced garlic
- 1 tbsp tahini
- 1 tsp salt
- squeeze of 1/2 lime
- Add all ingredients to a food processor and blend until smooth.
- Garnish with more cilantro and olive oil (optional). Enjoy with your favorite veggies or pita chips!
