YUM! If you’re a pasta lover like me, you’ll love this Avocado Basil Pesto Pasta! The best part is that it comes together in the blink of an eye! I timed myself putting this together and from start to finish it only took 23 minutes! The longest part was boiling the noodles. Even if you don’t fancy yourself a “chef” you can do this! This dish was super flavorful and creamy, I know you’ll love it!

Avocado Basil Pesto Pasta
Ingredients
- 1/4 cup sun dried tomatoes
- 2 whole avocados seeded and peeled
- 1 handful fresh basil About 12-15 whole leaves of various sizes
- 1 tbsp Italian seasoning blend
- 1 tsp minced garlic
- 1/2 tsp salt
- pepper to taste a few shakes
- 1 tbsp nutritional yeast
- 1/4 cup olive oil
- juice of 1/2 lemon
- 1 bag pasta of your choice
- Fresh cherry tomatoes or similar for garnish
Instructions
- Begin cooking pasta according to directions on the package
- In a food processor or blender (except for the fresh tomatoes), add all of the ingredients to a food processor and blend until smooth
- Once your noodles are ready, toss them in the avocado mixture until well coated. Top with fresh basil and sliced tomatoes and ENJOY!
