30 Minute Lentil Tacos

If you haven’t noticed by now, tacos are one of my FAVORITE things to eat! I love how versatile they are and I’m always coming up with different combinations in my head. I mean is there anything that can’t be put in a taco? In the past I’ve tried jackfruit, chickpeas, re-fried beans, portobello mushrooms, potatoes, and even quinoa! Lentil tacos were next on the list!

Lentils are one of those beans I’m trying to find more ways to incorporate into my diet. Not only are they super versatile, they’re rich in protein and are a great source of iron. They’re also high in fiber, so if you’re trying to make yourself a “regular” in the restroom, you’ll wanna try these tacos out! As you may have guessed, my favorite part is that this dish can be made in 30 minutes! Less, if you’re really movin’! The first time I tried these I was done in 22 minutes.

The recipe is really easy. I PROMISE! The longest/hardest part is simply chopping up the veggies, which doesn’t take long at all! Still nervous about making these 30 minute lentil tacos? Don’t be! Have a look at the ingredients below and the steps. You really only need SIX ingredients to make these a reality! Everything else you see in the pictures is totally optional.

You have the option of using a store-bought taco seasoning or you can make this easy taco seasoning blend and tuck it away in the pantry for future taco recipes. It keeps for months if stored properly in an air-tight container! You probably have most of the different seasonings in your pantry already! I paired mine with some leftover Mexican Rice I had in the fridge and some plantains I picked up from the store. Adding a squeeze of lime to my tacos always gives them a nice splash of freshness. I also added in some guac, fresh red onion, and tomatoes for garnish. Cilantro would be great here too!

Ingredients

  • 1 can brown lentils drained and rinsed
  • 1/2 red onion diced
  • 1/2 green pepper diced
  • 1 tsp minced garlic
  • 1 tbsp taco seasoning blend
  • salt+pepper to taste
  • 6 small tortillas for serving
  • your favorite taco toppings

Instructions

  • Add oil (or water) to a medium-sized pan and saute garlic, onions, and peppers until cooked. Season with salt and pepper to taste.
  • Once the veggies are cooked, add in the drained lentils and taco seasoning blend. Mix until well combined.
  • Allow the lentil mixture to cook for another 5-7 minutes. Serve immediately over tortillas and top with your favorite toppings.
